Easy CARROT & CORN SALAD
1 can sweet corn, drained........................................1 (15 oz) can sliced carrots, drained
1 small can diced mild chili or jalapeno peppers (drained)
about 1/4 cup diced white or yellow onion...........1-2 TB fresh cilantro, chopped
2 TB plain white vinegar.......................................2 tsp. agave nectar
1-2 tsp. Kosher, sea or pink Himalyan salt............1/2 to 1 tsp. fresh ground black pepper
1/2 tsp. cumin......................................................1/2 tsp. chili powder
1/2 tsp. smoked paprika

Mix everything together until blended well. Store in refrigerator.
This can be served cold or room temperature. (It won't go bad if it sits out for buffets or BBQs)
