Dark CHOCOLATE WALNUT PIE
3/4 cups sugar.......................................................................... 3 eggs
3/4 cup light corn syrup...........................................................1/4 cup molasses
1/2 tsp. salt...............................................................................2 TB. flour
2 TB. butter, melted.................................................................1-1/2 tsp. vanilla extract
1/4 cup dark unsweetened cocoa powder..............................1 TB dark chocolate syrup
2 cups walnut halves and/or large broken pieces
9” pastry shell, unbaked (frozen is fine)
powdered sugar ~OR~ fresh, real whipped cream
Optional: refrigerated roll of sugar cookie dough ~ cut off about 6" and roll out ~ cut into shapes to decorate the sides of the pie shell.

In a large bowl with a wooden spoon, combine and beat together sugar, eggs, corn syrup, molasses, vanilla and salt. Then add the rest of the ingredients and mix well. Pour into pastry shell (reserve a few of the unbroken halves to put on top). If you're using sugar cookies, line them up around the edge of the crust (overlapping a little) and in the center of the pie (if you want).
Bake at 300 for 1 hour or until set. * CHECK the pie after about 30 min. The sugar cookie cut-outs are probably already browned, so lightly cover the edges with foil. Remember though, that you want the cookies crisp like the pie crust (not soft like you'd normally want your cookies). * Cool. Top with powdered sugar or whipped cream … Serves 6-8
HINT: To make your whipped cream extra special, beat 2 cups heavy (or extra heavy) whipping cream with 1/2 c. sugar, 1 tsp. pure vanilla extra and 1/2 tsp. almond extract
