Crockpot BBQ PULLED PORK
3-4 lbs. boneless pork shoulder or butt
1/2 white or yellow onion, sliced……........2 TB brown sugar
2 TB smoked paprika………………….............2 tsp. Kosher salt
1 tsp black pepper……………………...............1 tsp. cayenne pepper
1 tsp. garlic powder…………………...........….2 tsp. liquid smoke (I like hickory or mesquite best)
1 cup BBQ sauce (I like Stubb’s hickory or mesquite best)
3/4 cup water………………………….............….1/4 cup apple cider vinegar

Mix together the brown sugar, paprika, salt, peppers, and garlic powder in a small bowl. Rub it on all sides of the pork.
Mix together the vinegar, water, BBQ sauce and liquid smoke in another bowl and then put that into your crockpot. Add the onions; and then put the pork carefully on top of the onions.
Cover and cook on low for 8-10 hours. Remove the pork and shred (throw away any large fatty pieces) ~ you can add some of the onion slices to it, if you want. Serve on buns, soft white bread, or as-is. (The sauce and onions in the bottom of the crockpot are good over mashed potatoes, fluffy biscuits or white rice. You might want to just save the sauce in a jar to heat up another night as a "gravy")
