1-1/2 cups of dry macaroni
6-8 oz. claw crab meat or imitation crab meat (shredded)
3 TB butter……………………………….………..2 TB flour
About 2 TB white onion, chopped finely (or 2-3 green onions, chopped)
1-1/2 cups milk……………………………………1/2 tsp. garlic powder
2 tsp. Dijon mustard……………………………..1-2 tsp. Kosher salt
3 oz. fresh grated Parmesan cheese………….1 TB. fresh parsley, chopped
About 2 cups (8 oz. pkg) shredded mozzarella or Italian blend REAL cheese

Preheat oven to 350 and spray a casserole dish with non-stick cooking spray.
Cook the macaroni according to the box instructions, drain well. Add the crab meat and chopped parsley; and set aside.
In a saucepan, melt the butter (on medium heat) and add chopped onions. Saute about 1-2 minutes. Sprinkle flour on top and whisk well, to form a roux. Slowly pour in the milk and add the mustard, while constantly stirring with a whisk. The mixture will start thickening.
Add the cheeses into the milk mixture. Add salt and pepper and keep stirring, slowly, until the cheese is melted. Pour the cheese mixture into the macaroni and crab. Stir well, until all combined.
Pour into the prepared casserole dish ~ and bake for 25-30 minutes (or until bubbly). Serves 4-6 people (depends how hungry you are!)
