CONFETTI DIP * graham crackers or fruit * uses rest of package of cake mix from pancakes *

CONFETTI PANCAKES
1-1/2 cups Funfetti or Rainbow Chip cake mix
(or you can use Strawberry or Vanilla cake mix with 1/2 cup rainbow sprinkles added)
2 TB oil ……….......................……………………….. 1 egg
1/2 cup milk ~OR~ sour cream ~OR~ Greek yogurt
CONFETTI TOPPING:
1 tub Rainbow Chip frosting (Vanilla or Strawberry will work too)
1/2 cup milk ……......................……………………. 1/4 cup rainbow sprinkles
Whisk together all pancake ingredients until smooth. Drop by heaping TB onto a hot buttered frying pan and cook until golden brown on both sides. Makes about 16 mini pancakes
Serve warm with whipped cream and chocolate sauce on the side for dipping ~ or drizzle CONFETTI TOPPING on them
** BONUS RECIPE (for rest of Funfetti cake mix): **

2 TB yogurt (vanilla or strawberry)
1 TB whipped cream (Cool Whip works too)
In a small bowl mix together the cake mix and yogurt until smooth. Gently fold in the whipped cream until combined. Serve with fruit, graham crackers, or animal crackers to dip.
