Rich softer cookies with a slightly crisper outside ~ made with a brownie mix and rolled in powdered sugar before they're baked. Your family will love them, and they may become your new favorite cookies!
BROWNIE SNOWBALL COOKIES
1 Box of Brownie mix (size to fit a 9x13” pan)
1 cup flour
3 eggs
1/3 cup oil
1/2 cup powdered sugar (for rolling cookies in)

Preheat oven to 350F. Line baking sheets with parchment paper.
Mix together brownie mix, flour, eggs and oil. The batter will be very thick.
Pinch off about 1 TB of batter and roll into a ball (or use a small 1” cookie scoop ~ I recommend spraying it with non-stick spray first). Roll ball around in powdered sugar, being sure to cover completely.
Set cookies 2” apart on cookie sheets. Bake for 9 minutes. Let them cool on sheet a couple of minutes, then remove to a wire rack. Makes about 3 to 4 dozen (depends how big you make them).

I made about 2 dozen Brownie Snowballs, then made one dozen of the CHRISTMAS TREES.
You'll need the Brownie Snowball dough, plus
mini Reese's Peanut Butter Cups and small Hershey Kisses (not the full size, but not itty-bitty either ~ they were in a silver package by the other candy or on the baking aisle)
Homemade CHOCOLATE GANACHE or a can of store-bought CHOCOLATE FUDGE FROSTING
tube of green decorator icing, and something to use as a tree topper (I had little red balls)
After you've made as many Snowballs as you want, just make about 1" balls with the remaining dough and bake them about 9 minutes too. Cool a few minutes on the pan; then remove to racks or paper to decorate and cool.
I spread my homemade ganache (which had been in the refrigerator, so it was firm) on top of each cookie (actually a little mound on top) and stick the peanut butter cup into it (so it sticks when the ganache/frosting hardens). Give them a little time to harden up, before you put a big dab of green decorator icing on top of each peanut butter cup; and then press down a Hershey's kiss on top (even better if the green squirts out a little).
Wait until the cookies are completely cool now, before you pipe green decorating icing in vertical lines over the peanut butter cup/Kisses trees. Make sure you have a little extra icing on top, so your topper will stick.
