CHRISTMAS SPARKLE SUGAR COOKIES
These are softer and chewier than most sugar cookies ….
1-1/4 cups sugar…………………………….... 2 eggs
1 cup Butter flavor CRISCO (MUST use CRISCO ~ That’s what makes them softer and chewier than cookies with butter)
1/4 cup light corn syrup ……………………1 TB pure vanilla extract
3 cups flour…………………………………....... 3/4 tsp baking powder
1/2 tsp baking soda ……………………….... 1/2 tsp salt
1-2 TB each red and green sparkling sugar or sugar crystals
***
Preheat oven to 375.
Beat sugar and Crisco in electric mixer at medium until well blended. Add eggs, corn syrup and vanilla ~ beat well.
Combine 3 cups flour, baking powder, baking soda & salt, plus colored sugars ~ add gradually to creamed mixture at low speed. Mix until well blended.
Using a 1-1/2" cookie scoop, make balls (or roll with your hands). Put on ungreased cookie sheet (I still like parchment paper) 2” apart. Bake at 375 for 5-9 minutes (depends on your oven & thickness of cookies)
Do not overbake!! (should just be turning light golden on bottoms) Cool 2 minutes on baking sheet; remove to counter to cool completely. Makes about 3-4 dozen cookies
NOTE: You can also roll out this dough, on a lightly floured board, and cut with cookie cutters **
