1 large onion, peeled and thinly sliced
2 large potatoes, peeled and thinly sliced
2 TB extra-virgin olive oil
2 TB coarse grain, spicy or Dijon mustard
1 tsp dried parsley flakes, or 1 TB fresh chopped parsley
1 TB crushed garlic
1 tsp Kosher salt
1 tsp ground black pepper
4 oz. shredded cheese (mozzarella, or cheddar, or blend)
Olive oil non-stick cooking spray
Preheat oven to 350 degrees. Spray an 8” or 9” square pan with non-stick spray.
In small bowl, mix together olive oil, mustard, salt & pepper, garlic and parsley.
Put half of the potatoes in bottom of pan. Place layer of onions over potatoes. Put remaining potatoes on top of onions. Drizzle oil mixture over it all. Spray top of casserole with olive oil non-stick cooking spray.
Cover and bake 20 minutes. Uncover and bake for about 25 minutes. Sprinkle with cheese; and bake for another 5-15 minutes, or until potatoes are done and casserole is golden brown on top. Serves 4-6
