CHEESEBURGER TATER TOT CASSEROLE
1 lb. extra-lean ground beef (I use 96/4)………..………..2 TB flour
2 cups shredded cheddar cheese or orange-white blend (divided)
1 cup milk
1 TB extra-virgin olive oil………………………...……….....1/2 green pepper, diced
1/2 white or yellow onion, diced………………...……..…..1/2 to 1 tsp. Kosher salt
1/2 tsp. pepper……………………………………………...….1 tsp. Worcestershire sauce
2 TB ketchup or BBQ sauce……………………...………......1 large dill pickle, thinly sliced
1 lb. Tater Tots, thawed………………………...………....….1 med. tomato, chopped
About 1-2 cups lettuce, shredded (garnish)

Preheat oven to 350. Spray a 9” or 10” square pan with non-stick spray.
Heat the olive oil on medium heat in a large pot; then add the chopped onion and green bell pepper. Allow them to cook for 3-5 minutes until they become translucent. Then add ground beef into onions/green peppers while breaking up the ground beef. Let this all cook for 8-10 minutes (the meat doesn't have to be totally browned, since it will bake later).
Drain the beef mixture, removing excess fat (there won’t be much fat if you use 96/4). Season the beef with the salt, pepper, garlic powder, Worcestershire sauce and ketchup. Mix it together, then stir in the pickles. Remove from heat.
Melt butter in medium saucepan (low-medium heat.) Then whisk in the flour (which will look lumpy). Slowly whisk in milk to remove the lumps. Once the milk begins to steam (and tiny bubble try to break the surface), add half of the sharp cheddar cheese. Constantly stir until the cheese has fully melted and the sauce is smooth. Remove from heat and set aside.
Spread the beef mixture evenly in your pan. Add the tater tots in rows on top of the beef. Next, pour the butter/cheese sauce over the tater tots. Sprinkle the rest of the cheese on top. (If you want to assemble it ahead, cover will foil now and bake later.) Bake in the oven for 30 minutes. Remove from oven and allow the casserole to cool. Sprinkle the tomatoes and lettuce on top and serve.
Serves 3-4 hungry people. Suggestion: You could serve Texas Toast or sliced, buttered & toasted hamburger buns with it to duplicate a true cheeseburger.
