CANTALOUPE SPINACH SALAD
4 cups fresh spinach leaves, torn
1 cup cantaloupe cubes
1 avocado, cubed
1/2 cup diced red bell pepper or sweet red pepper
2 TB chopped fresh mint leaves
1 TB orange marmalade (can be sugar-free)
1-1/2 tsp white wine or white balsamic vinegar
3 TB extra-virgin olive oil
1 tsp crushed garlic
Put the spinach, cantaloupe, avocado, red pepper and mint into a bowl. In a small bowl, whisk together dressing ingredients. Pour over salad and GENTLY toss to coat completely. Serves 2-3
