Fast & Easy BUFFALO style CHICKEN
about 3 lbs chicken parts (I used thighs and legs ~ excess skin cut off)
2-3 TB olive oil ……………………......................................1 TB. chili powder
1 tsp hot sauce (i.e. Tabasco)...........................................1 tsp. Kosher salt

Preheat oven to 400. Line a jelly-roll pan with foil.
Mix the olive oil, chili powder, hot sauce and salt in a big bowl. Dip the chicken pieces in there to coat well, and put on the pan. NOTE: Depending how much chicken you have (and how thick you coat it with the paste), you may need to make more of the seasoning. I just drizzled a little more olive oil and dumped more chili powder, salt & hot sauce into the bowl so I had enough to cover all the chicken pieces really well.
Bake at 400 for about 15-20 minutes; then turn them over and bake another 15-20 minutes (or until they're done).
Meanwhile, in a large bowl ~ whisk together 1/2 cup melted butter with about 1/4 cup Tabasco sauce, 1 TB crushed garlic and 1 TB chopped cilantro. As soon as the chicken is cooked, take it out and dip into the bowl of whisked sauce; mix them around to coat completely.
