BLUEBERRY KUCHEN
1 cup flour……………………………………………….pinch of salt
2 TB sugar……………………………………………….1 TB white vinegar
1 stick (8 TB) unsalted butter, softened

2/3 cup sugar……………………………………………2 TB flour
3-4 cups fresh blueberries……………………………1/2 tsp. cinnamon
powdered sugar (optional)

Preheat oven to 400. Spray a 9” spring-form pan with non-sticking baking spray.
Combine 1 cup flour, salt and 2 TB sugar; work in butter with fork or food processor (pulse). Mix in vinegar well. Spread mixture on bottom and 1” up sides the spring-form pan.
Combine 2/3 cup sugar, 2 TB flour, 2-1/2 to 3 cups blueberries and cinnamon; pour into crust. Bake at 400 for about 45-60 minutes (until crust is nicely browned and berries are cooked through). Remove from heat and put remaining blueberries on top. Cool and remove sides. Can sprinkle with powdered sugar before serving, if desired. Serves 8
NOTE: If you forget and put all the blueberries into the filling (like I usually do), don’t worry! It will be fine
