BBQ BUTTERFLIED Leg of LAMB
5-6 lb. leg of lamb, boned & butterflied (have your butcher do this)
1 cup sour cream or plain Greek yogurt................1/2 tsp. fresh ground pepper
2 tsp. Kosher, sea or pink Himalayan salt.............1 tsp. garlic powder
1 TB fresh parsley, chopped ~or~ 2 tsp. dried parsley
2 tsp. fresh oregano, chopped ~or~ 1 tsp. dried oregano

Combine all ingredients except lamb in a small bowl. Put lamb into a pan or on baking sheet (laying flat) and smear the marinade mixture thickly on both sides of the meat. Cover and refrigerate at least 4 hours, or (even better) overnight.
BBQ over hot coals about 20-30 minutes on each side. Let it rest about 5-10 minutes; then slice thinly to serve.
