BANANA STREUSEL COBBLER (sugar or sugar-free)
1/2 cup (1 stick) melted butter………………….....………..1 cup flour
1 cup sugar or regular white Splenda……….......…………1/4 tsp. cinnamon
2 tsp baking powder……………………………......…………1 cup milk *
1 tsp. vanilla……………………………………......…………..1/2 tsp. salt
2 medium or 3 small bananas (very ripe is best)
STREUSEL Topping:
1 TB packed brown sugar (I like dark) or brown Splenda blend
1 TB flour ...........................................................................1/4 cup uncooked oats
1/2 tsp. cinnamon

Preheat oven to 350. Pour melted butter into 8” baking pan or dish. Swirl so that it coats the bottom and up the sides of the pan.
Mix flour, sugar, baking powder, milk, cinnamon & vanilla in a bowl. Pour over the melted butter. Slice bananas into the batter. (The butter will rise up the sides of the pan when you put the other ingredients in. That’s fine because you’re not adding butter to the streusel.)
Mix the Streusel ingredients in a small bowl and sprinkle over the bananas.
Put the pan onto a rimmed baking sheet to cover any run-over. Bake for 40-45 minutes (or until a toothpick comes out clean). Cut into wedges or scoop onto a plate to serve (can top with whipped cream or ice cream, if you want it really decadent)
NOTE: I like unsweetened Vanilla Almond Milk, which has no sugar, is less calories and adds a little extra vanilla flavor to the batter.
