Preheat oven to 350 degrees and line baking sheets with parchment paper.
Whisk together cake mix and pudding mix in a large bowl (or in your electric mixer bowl).
Add eggs and oil; and beat until smooth (dough may be thick). Add the chocolate chips, dried pineapple and Craisins, and gently beat them in (just until mixed through).
I use a heaping cookie scoop to put them on the baking sheet (about 1 dozen to a sheet). Then, I go back and roll them into a ball in my hand, and flatten them slightly. Bake for 9-12 minutes (depends on your oven, the size of the cookies, color of your pan and HOW SOFT you want them to be. My husband likes them a little crisper, so I bake them a little longer) ~ they should puff a little, then flatten. (While the cookies are baking, cut your maraschino cherries in half and drain them completely on a paper towel, so they don't bleed into the frosting later.)
Let them sit on the pan a few minutes before removing to racks or paper to cool completely. Frost with a generous amount of frosting. Top each one with half cherry and sprinkles.
Makes 2 to 3 dozen.
