2 pounds ground pork ………….............……...... 8 strips bacon
1 lb. mild or spicy Italian sausage (removed from casing)
1 cup crushed Ritz crackers (Roasted Garlic or vegetable)
1/4 cup finely chopped fresh Italian parsley leaves

Heat oven to 400. Line baking sheet with foil and set aside.
Heat oil in skillet (over med. heat); add onion and garlic; cook until softened, about 3 minutes; set aside.
In large bowl, whisk together eggs, buttermilk, mustard, Worcestershire, thyme, oregano, salt, and pepper until well mixed. Add onion mixture, ground pork, sausage, cracker crumbs, and parsley. Mix until thoroughly combined (don't squeeze mixture).
Put meat on prepared baking sheet and form into a 9x5” rectangle. Arrange bacon across top of loaf and bake temperature is 155 on an instant-read thermometer (about 55-65 minutes). * If necessary to crisp bacon: Remove from the oven to the broiler, and broil about 3-4 minutes. * Remove from oven and let it rest about 10 minutes before slicing. Serves 8-10
TIP: Make about 4-5 strips bacon; crumble them and mix into mashed potatoes to serve with this
