BANANA CINNAMON Baked DONUTS (with sugar or sugar-free)
1 cup flour
1/4 cup granulated sugar ~or~ regular white Splenda
1 tsp. baking powder………………………………1/4 tsp. baking soda
1/2 tsp. cinnamon…………………………………..1/4 tsp. salt
1/4 cup milk, any type (I like unsweetened vanilla Almond milk)
1 ripe banana, mashed………………………….….1 egg, beaten
1 tsp. vanilla extract………………………………..1 TB butter, melted

1/2 cup powdered sugar ~or~ 3 TB Splenda + 1 TB cornstarch
Milk, as needed
About 2 TB white sugar or Splenda……………....1 tsp. cinnamon

Preheat oven to 350. Spray a donut pan with non-stick baking spray.
In a large bowl, mix together flour, sugar, baking powder, cinnamon, and salt (wooden spoon works well). Make a well in the center of the mixture and add the milk, mashed banana, beaten egg, vanilla, and butter. Mix until all ingredients are just combined.
Spoon mixture equally into the 6 openings in the donut pan. (Each one should be about 3/4 full.) Bake for 10-15 minutes until lightly browned and spring back when lightly touched.
While baking, mix the 2 TB sugar & 1 tsp. cinnamon together in a small bowl and set aside. ** Put the powdered sugar into a small bowl, and very gradually whisk milk in until a very thick, smooth consistency. Set aside **
Cool the baked donuts in pan for about 5 minutes, remove and lightly spread the glaze over each donut; then sprinkle with cinnamon sugar. * Makes 6 donuts *
