Eric's Smokey FRIED CHICKEN SALAD
1 large fried chicken breast, with skin (ours was Dixie Fry oven-fried ~ very crunchy skin)
about 1/4 cup finely chopped white onion
about 2 heaping TB mayonnaise or Miracle Whip
1 heaping TB horseradish sauce (or mix about 1 tsp. horseradish with 3 tsp. sour cream)
Kosher salt, to taste (we like a lot)
about 1 cup (or more) shredded cheese (we used Colby/Cheddar combo, but any is fine)
1-2 tsp. smoked paprika (smoked is essential for flavor ~ regular paprika isn't as good)

Dice/shred the chicken and crunchy skin into fine pieces. Mix everything else together with it. Serve on crackers or make sandwiches.
NOTE: My daughter and I thought that chopped fresh cilantro or parsley would be great in here, but men don't seem to grab anything "green" when they're in the kitchen.
