1 pound ground beef, browned (lean or extra-lean) ^^
1 large onion, chopped, browned
2 packages Old El Paso Taco Seasoning Mix, Dry
2 cans tomatoes, cut up (14.5oz.) **
1 package mixed frozen vegetables, thawed (10 oz)
1 can Kidney Beans, drained & rinsed (20 oz.)
1 can Beef Broth (10-3/4 oz.)
1 TB chopped garlic ………………...........…............ 1 tsp Salt
1/2 tsp black pepper…………………...................... 1/4 tsp Hot Sauce
Mix together. Simmer uncovered for 1 hour. (For extra flavor, add chopped cilantro.) Top each serving with corn chips and grated cheddar cheese. Makes 6 servings.
Note to me from my friend: Made this for dinner last night, one of my old easy recipes I have not made for a while. It can be put in a slow cooker and cooked like a stew.
MY NOTES:
(1) ^^ Brown the ground beef and onion together in a small amount of oil (I like olive oil); drain and proceed with recipe.
(2) I would put the fresh chopped cilantro on top as a garnish, rather than cook it.
(3) ** for the TOMATOES, I would use MEXICAN or CHILI-READY diced tomatoes
(4) ADDITIONAL GARNISH: Sour Cream ~ sliced BLACK OLIVES
