Creamy HORSERADISH OREGANO COLESLAW
1 big bag of pre-cut coleslaw mix (mine was thicker cut, not the angel-fine variety)
1 tsp. lemon juice..............................................................1/4 cup apple cider vinegar
1 TB granulated sugar.....................................................1 tsp. Kosher salt
1/2 tsp. black pepper.......................................................2 tsp. fresh oregano leaves (or 1/2 tsp. dried)
1/2 cup thinly sliced white onion................................1/2 cup mayonnaise (mine has olive oil in it)
(NOTE: don't use red onion or it will "bleed" all over the other ingredients)
2 TB sour cream or plain Greek yogurt.....................2 TB creamy horseradish sauce

Whisk together all of the dressing ingredients in a large bowl. Then toss in the coleslaw mix, onion and fresh oregano (dried oregano can be whisked with the dressing). Toss to coat it well. This will keep well in the refrigerator (covered) for several days.
