1 tube refrigerated pizza dough
1/2 cup marinara, pizza or pasta sauce (from a jar is fine)
1 cup shredded mozzarella or pizza blend cheese
2 TB fresh shredded Parmesan cheese…….................…...1 tsp. garlic powder
1-2 small zucchini, very thinly sliced………….................…1 tsp. Kosher salt
3-4 slices thick bacon, cooked and crumbled
1/4 cup red bell pepper, chopped
2 TB extra-virgin olive oil………………………..................….1 tsp. cracked red pepper
1 tsp. finely minced fresh rosemary……….................……..1/2 tsp. dried oregano flakes
***
Preheat oven to 475. Spray a round pizza pan or 15” rectangle pan with non-stick spray. *** In a bowl, toss the zucchini with the olive oil, salt, cracked red pepper, rosemary, oregano and garlic powder. Set aside.
Spread the pizza dough out evenly over the pan, pressing down with your fingers. Form a very small (about 1/2") edge to the crust. Assemble:
Spread with the marinara sauce *** Top with the mozzarella and Parmesan cheeses *** Evenly spread the coated zucchini slices over the cheese. *** Sprinkle the bacon and red pepper on top. (NOTE that the cheese is on the bottom, and the zucchini is on top so that it will get slightly roasted in the oven).
Bake for about 12-15 minutes, or until the cheese is melted and the crust is browned and crisp. Let it stand a minute or 2 before slicing.
