fresh spinach (about 1/3 bag for 2 people ~ adjust amount for what you need)
mini sweet peppers ( I used 2 ~ 1 orange and 1 yellow), seeded & chopped small)
thinly sliced red or white onion (I used about 1/4 of an onion for 2 people)
Italian style vinaigrette salad dressing (whatever you like ~ the Roasted Red Pepper was good)
1-2 tsp. Balsamic vinegar
Slice the spinach leaves into strips and put into a bowl with the onions and sweet peppers. In a small bowl, whisk together about 2 TB salad dressing with the Balsamic vinegar. Toss the salad with the dressing until well coated. Put into a bowl, cover and refrigerate for up to about 8 hours. The spinach will "wilt" in the bowl as it sits.
Optional add-ins: sliced mushrooms, shaved carrots
