BUTTERSCOTCH TOFFEE CHIP Blondie Bars
1 stick unsalted butter, melted
1 egg
1 cup dark brown sugar
1 cup flour
pinch of salt
1 tsp butterscotch extract (you can also use caramel)
2 tsp butterscotch ice cream syrup (or caramel)
1/2 cup butterscotch chips
1/4 cup Heath bits

Optional GLAZE:
1 TB butterscotch syrup
about 3/4 cups powdered sugar
milk, added tsp at a time as needed
Preheat oven to 350. Spray an 8" or 9" pan with non-stick spray.
In a bowl, mix all ingredients (except chips & bits) together until well blended. Mix in chips and bits. Spread in prepared pan (I use the back of a dampened spoon to spread evenly). Bake for 25-28 minutes or until toothpick comes out clean. Remove to rack.
Meanwhile, whisk all glaze ingredients together in a small bowl. You'll add milk, 1 tsp at a time, until you get a smooth, but thick drizzle consistency. I like to drizzle on warm bars, but you can wait until they're cooled if you want.
NOTE: If you want to add some chocolate chips, that's good too! You can use chocolate syrup (instead of butterscotch) in the glaze then, if you want.
