1/4 cup butter, melted ………………… 1 egg
1 cup milk
1 cup shredded tart apple (i.e. Granny Smith or Pippen)
1-1/4 cups flour ………………………...1-1/4 tsp baking powder
1/2 tsp ground cinnamon ……………...1 TB white sugar
In large bowl, combine butter, egg, milk and apple. In separate bowl, whisk together flour, baking powder, cinnamon and sugar. Stir flour mixture into apple mixture, just until combined.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
TIP: Add about 1/4 tsp cinnamon to your maple syrup and heat in the microwave before pouring on top of the pancakes.
VARIATION: CARAMEL APPLE PANCAKES
Substitute 1 TB brown sugar (instead of white sugar). Add 1/2 tsp caramel extract to wet mixture. Stir about 1/2 cup Heath or toffee bits (available on baking aisle) into mixture before pouring onto griddle. Serve with warmed Caramel ice cream topping.
