Mom’s SALMON PATTIES with DILL SAUCE
1 can (will be about 15 oz. or so) salmon
1 egg, slightly beaten
1/2 – 3/4 cup bread crumbs or crushed Saltine crackers
3 TB chopped green onion ……… salt & pepper to taste
1 medium clove garlic, crushed
2 tsp dillweed ……………………… oil
Sauce:
1/4 cup EACH Creole or Dijon mustard AND mayonnaise
2-3 TB dillweed
Lemon wedges to squeeze over patties and/or garnish (optional)
Put salmon into large bowl and mash all the bones & skin (they’re edible) or remove them, if desired. Gently mix all patties ingredients together. Form into 4-8 patties (depending how thick & big you like them). Heat oil over medium-high heat in large skillet. Cook patties until nicely browned on both sides (about 3-4 minutes per side). Serves 4-6
Mix sauce ingredients together; serve on the side or drizzled on top.
SUGGESTION: Try serving these in hamburger buns, with the sauce, lettuce, tomato, onion and avocado slices
TIP: Use the sauce over fresh salmon, and as a dip for fresh vegetables.
