EASY * no candy thermometer needed **
36 maraschino cherries, coarsely chopped
1 (12-oz) package semisweet or dark chocolate chips
6 (1-oz each) squares bittersweet chocolate, chopped
1 (14-oz) can sweetened condensed milk
1 tsp maraschino cherry juice
Line an 8" square pan with foil (extending over the sides) and lightly spray with non-stick spray. Set aside. Blot cherries dry with paper towels.
Combine chocolates in heavy saucepan over very low heat; stir constantly until melted and smooth. Remove from heat, and stir in sweetened condensed milk and cherry juice. Stir in cherries. Spoon mixture into prepared pan. (If needed, smooth the top of the fudge with a teaspoon dipped into reserved cherry juice.) Cover and chill 2 hours or until firm.
Pull fudge out of pan by foil “tabs”; cut into about 36 squares. Store in an airtight container in refrigerator.
