This cake is so moist and rich and just perfect for this time of year. (and easy to make!)
Ingredients:
1 egg.................................................................3/4 cup + 2 TB sugar
1 heaping tsp. cinnamon.................................1/4 cup oil
3 medium Gala or Fuji or Honey Crisp apples (or 3 large red or brown pears)
1 cup flour.........................................................1 tsp. baking soda
1 TB sugar (to sprinkle on top)

Preheat oven to 350°. Spray a 9" round or square pan with non-stick baking spray.
In a large bowl, mix the egg, sugar, cinnamon and oil. Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.)
Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well (best with a fork or wooden spoon) until all of the flour is absorbed by the wet ingredients.
Pour mixture into prepared pan and sprinkle the 1 TB sugar evenly over the top. Bake for about 40-50 minutes.
