Milk Chocolate MINT CHIP BROWNIE Cookies
1 package milk chocolate brownie mix (for a 9x13" pan)
1 egg.......................................................................2/3 cup oil
1 cup flour..............................................................1 tsp. baking powder
1/2 to 1 tsp. peppermint extract...........................1/2 tsp. baking soda
1/4 cup water..........................................................12 oz. bag Winter chips (mint & chocolate)

Preheat oven to 350. Line baking sheets with parchment paper.
Put all of the ingredients (except the chips) into a big bowl, and stir well with a wooden spoon until well blended. Add the chips (but reserve a handful or so to put on top later) and mix well. ** You can also do this in an electric mixer bowl **
Drop the cookies by the teaspoon onto the baking sheet. They'll spread on the pan a little, but I still got 4 rows of 4 each on a large baking sheet. Then, go back and add a couple of chips to the top of each cookie, if you want.
Bake for about 10-15 minutes or until they're somewhat firm to the touch. Let them cool on the pan for a few minutes, then remove to rack or paper to cool completely * They'll firm up a little as they cool ** Makes about 4-5 dozen.
