2 cups corn kernels (if frozen, thaw first) * canned or fresh
2 cups chopped tomatoes
1/2 teaspoon Kosher salt
pepper
1 teaspoon sugar
1/2 tsp dried basil (or fresh, chopped)
1/2 cup dry bread, cornbread or cracker crumbs
2 TB butter
Combine corn and tomatoes with salt, pepper, basil and sugar; pour all into a greased baking dish. Sprinkle the bread crumbs over mixture and dot with the butter.
Bake in a 350° oven for 30 minutes. Serves 4
