BRUSSELS SPROUTS & POTATOES with BACON
fresh BRUSSELS SPROUTS ~ I used about 8-10 giant ones (cut in half), but you could use twice as many (or more) smaller ones
2-3 strips of thick bacon (mine was Applewood smoked) ~ cut into about 1/2" pieces
1 medium Russet potato ~ cut into small squares (I cut in half, then quarters ~ 4 slices lengthwise and then about 1/4" chopped. I leave the peel on)
2 oz. butter, small cubes
salt & pepper as desired

Put the bacon pieces into a skillet on med-high and saute until bacon is crispy. Take it out and set aside. Leave the bacon grease in the pan!
Put the Brussels sprouts and potatoes into the skillet. Sprinkle the butter cubes around on top and give a few twists of salt & pepper grinders. Then, just let it go (medium) ~ coming back every 3-5 minutes to turn the Brussels sprouts and potatoes over ~ for about 20 minutes. (I covered with a big screen over the skillet, so I didn't have splatters all over the stove.) The Brussels sprouts will be a little "browned" on some sides, and you want to be sure the potato cubes are soft. Taste and adjust salt & pepper, if needed.
Eat them now or put into a casserole dish to reheat later ~ about 5 minutes (covered) in the microwave is usually enough time.
Should feed 3-5 (depends how much of each ingredient you use and how big your appetites are!)
