BALSAMIC COFFEE VINAIGRETTE
1 tsp. garlic powder....................................................4 tsp. balsamic vinegar
2 TB brewed strong coffee, cooled.............................. 1 TB Dijon mustard
2 TB maple syrup or honey or agave nectar.................1/3 cup extra-virgin olive oil
1 tsp. Kosher salt........................................................1/2 tsp. black pepper

Put all ingredients into a jar with screw lid (or blender). Shake (or blend) until it's very thoroughly mixed. Refrigerate (but might want to take out about 5 minutes before using, in case the oil hardens up ~ then shake it up really well again).
