PERFECT Oven ROASTED Baby POTATOES
about 1/2 lb. baby potatoes, cut in half
about 1 TB extra virgin olive oil...................................about 1 tsp. Kosher salt
1 tsp. black pepper.......................................................2 tsp. fresh parsley, chopped
1/2 tsp. smoked paprika...............................................1/2 tsp. garlic powder
Optional: 1-2 tsp. fresh rosemary, minced
Optional: 1 TB dry Parmesan cheese (the cheap kind, in the shaker can)

Preheat oven to 425. Line a sheet pan with foil and give a quick spritz of non-stick spray.
Put the potatoes into a plastic bag. Drizzle with the olive oil and sprinkle with the rest of the ingredients. Hold the bag tightly close and shake until the potatoes are thoroughly coated with olive oil and spices. Then dump the potatoes onto the sheet pan and spread them out evenly.
Roast for 10-12 minutes ~ then flip them over. Roast for another 7-15 minutes or so ~ until they're tender and dark golden brown.
