1 8-oz. can solid white albacore tuna in water (drained) *OR* 8 oz. fresh tuna, grilled and cut into small pieces ** (NEVER use the pink mushy kind, packed in oil)
1 15-oz. can cannellini beans, drained (can use Northern or garbanzo)
1-2 small sweet peppers, chopped (red, orange, and/or yellow)
6 radishes ~ cleaned, trimmed and chopped
1/2 small white or yellow sweet onion ~ thinly sliced
1 large lemon ~ zested and juiced
1/3 cup (about a handful) fresh parsley, chopped
4-5 tsp. extra-virgin olive oil
Kosher salt and pepper, to taste
Combine all ingredients in large bowl, and gently mix until evenly coated. Serve in lettuce cups or over shredded iceburg lettuce. Makes about 3 cups (about 2 servings)
