GRILLED SAUSAGE:
1 to 1-1/2 lbs. smoked sausage, bratwurst or kielbasa (cut into about 6” pieces)
1 12-oz. can/bottle of beer
1 TB. chopped fresh rosemary
In a large pot **, combine all ingredients. Simmer over a low heat for 20 minutes. Preheat grill. Remove bratwursts from pot and put on pre-heated BBQ grill for about 5-8 minutes, (turning occasionally) until brown. (TIP: If you sprinkle with water they will form a crispy skin.) Serve with foil packets.
** NOTE: You can just marinate the sausages in the beer/rosemary for at least an hour first, if you don’t want to fool around with the stove. But, immersing them in the beer (somehow) will keep them juicier when you grill them.
POTATO FOIL PACKETS:
4-5 small red potatoes, cut into 1” pieces
1 medium white or yellow onion, roughly chopped
About 1 firmly packed cup of sauerkraut, rinsed and drained
1 TB extra-virgin olive oil
Kosher salt and pepper, to taste
1 TB fresh rosemary, roughly chopped
3-4 sheets heavy duty aluminum foil, about 12” each
Spray the topside of each foil sheet with nonstick cooking spray.
Combine all packet ingredients together in a big bowl; toss to coat everything evenly. Divide the mixture evenly on foil sheets. Bring up sides of foil. Double fold the top and ends to seal the packets, leaving room for heat circulation inside. Put packets on grill; heat 20-25 minutes until potatoes are tender
