KEY LIME Frosted COOKIES
1/2 cup (1 stick) butter, softened ……………… 1-1/4 cups sugar
1 egg plus 1 egg yolk ……………………………..2 cups flour
1/4 cup Key lime or other lime juice ………….... 1/2 tsp salt
2 tsp lime zest (grated peel) ……………………. 1 tsp baking powder
1-2 drops green food color (optional)
Preheat oven to 350. Line cookie sheets with parchment paper.
In a large bowl, cream butter and sugar until fluffy. Add egg and egg yolk, beating until creamy. Beat in lime juice, food color and zest just until combined. Stir in flour, baking powder, and salt; mix well. Refrigerate dough 60 minutes, until firm.
Shape dough into 1” balls and place 1” apart on cookie sheets. Bake 8-12 minutes, or until light golden. Transfer to wire rack. When cook, spread each cookie with some frosting.
KEY LIME BUTTERCREAM FROSTING
1/2 cup butter, softened ……………………….. 1-1/2 tsp Key lime zest
1 tsp vanilla extract …………………………….. 1/8 teaspoon salt
1 (16-oz.) package powdered sugar
3 TB Key lime juice ……………………………… 1 to 2 TB milk
1-2 drops green food color (optional)
Beat first 4 ingredients at medium speed with an electric mixer until creamy.
Gradually add powdered sugar alternately with Key lime juice, food color and 1 TB milk, beating at low speed until blended and smooth after each addition. Beat in up to 1 TB additional milk for desired consistency.
EASIEST KEY LIME FROSTING:
Use a store-bought can of Key Lime frosting. Put about half can in a small bowl and beat with a little lime juice and/or milk, until smooth spreading consistency.
