Baked PANCAKE & EGG BREAKFAST
1 TB sugar ~or~ regular white Splenda............................................1 cup all-purpose flour
1-1/2 tsp. baking powder...................................................................... 1/4 tsp. salt
2 TB melted butter.................................................................................. 3/4 cup milk
1 egg............................................................................................................. 1 tsp. vanilla
dash of cinnamon
4 eggs...........................................................................................................1/4 cup milk
1/2 tsp. Kosher salt
OPTIONAL: fresh fruit * maple syrup * powdered sugar

Preheat oven to 350. Spray a 9" square pan with cooking spray.
In a medium bowl, whisk together all of the ingredients (through the cinnamon above) until it's mixed well, but there may still be some lumps in there. Pour into the prepared pan and bake for 10 minutes.
Meanwhile, whisk together the 4 eggs, 1/4 cup milk and Kosher salt in that same bowl. Take the pancake out of the oven after 10 minutes, and pour the eggs on top. Put the pan back into the oven and bake another 8-10 minutes, or until the eggs are set.
Cut into squares to serve. I like it with fresh fruit (I used sliced papaya here, with a little lime juice squeezed on top) and maple syrup ~ although powdered sugar is also good.
You can cut this into 4 big squares... or 2 larger rectangles (if you have a hungry husband or teenage sons)... or cut 1 of the 4 squares into 3 finger-sized rectangles for young children. .... So, how many it will serve depends on your family (don't you hate those recipes that actually feed 1/2 of what the recipe says it will feed?)
