Spicy MASHED POTATO SALAD
About 2-1/2 lbs. potatoes (Russet, Yukon Gold, red)
(or about 2 cups leftover MASHED POTATOES)
1/2 cup of finely minced onion……..........…..1/2 tsp. smoked paprika
1 green onion, thinly sliced…………..........…1 jalapeno pepper, seeded & finely minced
2 tsp. fresh chopped cilantro or parsley
3/4 cup mayonnaise (mine has olive oil in it)
1 TB. Creole seasoning (i.e. Tony Chachere or Zatarain’s)
1 tsp. Kosher salt……………………….1 tsp. black pepper

If you’re using fresh potatoes, peel, dice and then boil them for 15-20 minutues, until they’re soft. Drain them; put into a bowl and mash them well with a potato masher. (Don’t use a mixer to mash potatoes ~ that will make them “gluey”)
While the potatoes are cooking, mix together the mayonnaise, Creole seasoning, salt, pepper and smoked paprika in a large bowl. Put onion, minced jalapeno, green onion and parsley into the dressing ~ and wait for the potatoes to finish cooking.
When the potatoes are drained and mashed, add them to the dressing and toss until the potatoes are coated (you can add a little more mayonnaise, if needed). Taste and adjust seasonings as desired. Serve cold, hot or room temperature
