1 loaf ciabatta or foccacia (flatter, dense bread) ~ mine was specifically to reheat later, but any loaf from the bakery or gourmet bread aisle will work
Extra-virgin olive oil ....................................................fresh chopped cilantro

Preheat the oven to 350. Put your loaf of bread on a baking sheet and drizzle with the olive oil. Then spread it over the entire top and sides of the loaf with your fingers.
Sprinkle the garlic, cumin, chili powder, paprika and salt lightly over the top (use as much or as little as you like). I very-thinly sliced about 2 TB worth of white onion and scattered it over the top ~ then sprinkled about 1 TB. chopped fresh cilantro on top.
Bake at 375 for about 12-15 minutes, or until the bread is lightly browned and getting a little crusty.
Eat it as is.... or combine a little of the same spices (plus a lot of chopped fresh cilantro) into about 1/4 cup of extra-virgin olive oil and use that as a dipping sauce.
This is an excellent choice to have with seafood and fish, with Southwest flavor, since cheese doesn't work well with seafood.
