MAI TAI Grilled SALMON
1 pound fresh salmon........................................................2 TB extra-virgin olive oil
2 TB lime juice....................................................................2 TB orange or pineapple juice
2 TB Rum (dark or light)....................................................1 TB orange liqueur (i.e. Triple Sec)
2 tsp. crushed or minced garlic........................................1 tsp. Kosher salt
1/4 tsp. ground ginger (optional).........................................1/2 tsp. dillweed (optional)
TROPICAL Sweet & Spicy AIOLI
1/2 cup mayonnaise............................................................1 TB lime juice
1 TB pineapple juice............................................................dash of ground ginger
1 tsp. fresh lime or orange zest.........................................1-2 tsp. Sriracha
1/2 tsp. honey

Put the salmon in a glass baking dish.
In a blender, combine marinade ingredients and whir it for about 30 seconds, until full blended.. Pour the marinade over the salmon and let set for 15-30 minutes.
Mix together the Aioli ingredients in a small bowl and set aside.
Meanwhile, heat your grill, grill pan or skillet to medium high heat. Transfer the salmon to preheated grill and grill about 3 minutes on each side (or until the salmon is cooked to your desired doneness ~ depends on your grill and thickness of salmon), brushing the salmon with the marinade as it cooks. Remove the salmon from the grill. Serve with Aioli on the side.
