FRIED EGG, PEPPERS, ONIONS & BEEF HOAGIE
about 2-3 oz. deli roast beef...............................................1 TB horseradish sauce
2 slices smoked Gouda cheese............................................about 1/4 cup sliced bell peppers
about 1/4 cup sliced white or yellow onion........................1 TB extra-virgin olive oil
2 eggs................................................................................Kosher salt & black pepper

First, I sautéed the peppers and onions in the olive oil, which I heated up in a skillet. Meanwhile, slice the bread and spread the bottom with softened butter. Then, lay 1 slice of the Gouda cheese; and the roast beef. Drizzle the horseradish sauce over the roast beef. (If you don't have horseradish sauce, you could mix together full-strength horseradish with some mayonnaise.)
The sautéed peppers & onions go on top of the roast beef. When you take the peppers & onions out of the pan, put in the 2 eggs and cook them over-easy. The eggs go on top of the peppers & onions (with some Kosher salt & pepper). I topped that off with another slice of smoked Gouda cheese, and the top of the bread.
Wrap up the sandwich in foil (ok if a little of the top bread shows, because it will just get a nice crisp texture in the oven). I put that onto a metal pie pan and reheated about 15-20 min. in a 350 oven.
Serves 1 (hearty appetite) .......... I served fresh fruit salad and Tuscan pasta salad with it.
