3 cups finely diced seedless watermelon
2 jalapeno peppers, seeded and minced
1/3 cup chopped cilantro, (about 1/2 bunch)
1/3 cup minced red onion, (about 1/2 small)……… 1/4 cup lime juice
optional: some diced (seeded) cucumber, if you want
Put all ingredients in a medium bowl; stir well to combine. Season with 1/4 tsp Kosher salt, or to taste. Serve at room temp or chilled.
