Fresh Peach, Basil and Honey Salad
4-5 small ripe peaches (or 2 large), pitted and cut into bite-size pieces
About 1-2 cups chopped romaine (can also use arugula and/or spinach, or whatever you have ~ I thought I had romaine but only had a bag of mixed iceberg lettuce salad this time)
1 TB honey..................................................................1 TB rice vinegar (plain or flavored)
3-4 fresh basil leaves, thinly sliced……………….pinch of Kosher salt
About 1/4 cup chevre (goat cheese), crumbled (I used blueberry, but lemon or plain are fine too. You could even substitute tiny cubes of fresh mozzarella, or feta cheese {if you want a salty & sweet flavor})

Whisk together the honey, rice vinegar, salt and basil in your salad bowl. Add the peaches and gently toss to coat. Let them sit for a while to release the juices (it will also sweeten and soften harder peaches ~ this is called "macerating", which is really just marinating but pertains to fruits and vegetables).
Add the lettuce to the salad bowl and toss with the peaches (and any liquid in there). Then sprinkle the cheese on top and lightly fold into the salad. Serve immediately.
Serves about 2-4 as a side dish
