GRAM's 2-lemon FRESH LEMONADE
2 big lemons (squeezed ~ and then I cut a few thin slices and throw them in the pitcher), strained
about 3/4 to 1 cup sugar (I've never really measured ~ it's about 2 scoops)
about 1/2 tsp. to 1 tsp. pure vanilla extract (again, I've never really measured but don't overdo it)
1 cup very warm or hot water
cold water and ice to fill your pitcher
OPTIONAL: mint

Put the sugar into the warm/hot water and stir until it dissolves. Then put into the pitcher with the vanilla extract. Strain the fresh lemon juice into the pitcher (you don't want seeds in there), and fill about 2/3 up with water. Fill the pitcher up the rest of the way with ice. Put the slices of lemon in there (and mint, if you're using it as a garnish). I keep a long glass stirrer in there, so I can stir before serving.
TIP: Press down and roll your lemons on the counter before using, to get them as soft & juicy as possible.
