1 pound frozen French fries (thicker ones with peel are best ~ i.e. steak fries)
2/3 cup extra virgin olive oil………………………………1 tsp. Kosher salt
2 TB crushed or minced garlic………………………….…2 TB chopped fresh parsley
1 tsp. coarsely ground black pepper
Heat oven to 375. Line a baking sheet with foil and spray with olive oil non-stick spray. Spread the frozen (best if they’re thawed) fries in a single layer on the pan; then bake for about 15-25 minutes (longest time if they’re frozen) until crispy (you want them a little more done than normal, so the sauce won’t make them soggy).
Meanwhile, combine olive oil, salt, pepper and garlic in a lidded jar and shake to thoroughly combine, or whisk together in a large bowl; set aside.
When the fries are ready, put them HOT into the large bowl with the sauce and toss to cover them completely. Serve hot.
