1/2 cucumber, sliced and then cut slices in half (seed first, if needed)
1/4 to 1/2 white onion, sliced and cut into cubes

1 TB extra-virgin olive oil..................................................1 TB white wine vinegar
1 tsp Kosher salt................................................................1/2 tsp coarse black pepper
1 TB fresh basil leaves, chopped ~OR~ 1-2 tsp. dried basil leaves
Whisk together the simple salad ingredients. Pour over the vegetables in a bowl, and lightly toss. This will keep for several days in the refrigerator.
NOTE ** For Roma tomatoes, I cut them into quarters, lengthwise ~ then cut each quarter into about 4 pieces (larger chunks).
