CAULIFLOWER KALE CABBAGE CHOP
about 1 cup red cabbage, small coarse chop
about 1 cup cauliflower, small coarse chop
about 1 cup broccoli, small coarse chop
1 green apple, cored & diced………....1 cup kale, chopped
1/2 cup dried cranberries ……………1 large (2 small) carrot, peeled & diced
1/4 cup sunflower seeds (optional ~ I don’t really like them in there)
2-3 TB fresh parsley, chopped
(If you have some candied pecans, they would be good in here too!)
MAPLE DIJON VINAIGRETTE:
2 tsp. Dijon mustard…………………..2 tsp. Maple syrup
1 TB extra-virgin olive oil…………….2 tsp. orange juice
1/2 tsp. ground ginger………………...1/4 tsp. turmeric
2 tsp. Kosher or pink Himalayan salt
1 tsp. coarse ground pepper

Mix all salad ingredients together in a bowl. Whisk together the dressing ingredients and add to the salad ingredients. Stir to blend completely. Keep stored in a covered glass container in the refrigerator (will keep for 4-5 days).
