SPEEDY SHRIMP SCAMPI PASTA
1 TB extra-virgin olive oil……………………....4 TB butter
1 lb. medium shrimp (peeled & cleaned)
about 1/4 cup red bell pepper, diced
about 1 tsp. Kosher salt……………………....…about 1/2 tsp. ground pepper
4 tsp. garlic, crushed or minced...……..…….1-2 tsp. crushed/cracked red pepper
1/2 cup white wine…………………………….…..about 2 TB lemon juice
About 8-12 spaghetti, linguine or fettucine ~ cooked & drained (not rinsed)
3/4 to 1 cup fresh grated Parmesan or Italian blend cheese
1-2 TB fresh parsley, chopped (reserve a little to garnish the top)

Cook pasta per package instructions. Drain well (but do not rinse), and set aside.
In a large skillet over medium heat, melt the butter over medium. Add the bell pepper and saute for about 3 minutes, until soft. Then add shrimp and season with salt and pepper. Cook until pink (about 2 minutes per side). Take out the shrimp and set aside.
In the same skillet, add olive oil and garlic ~ cook about 1 minute. Add wine, lemon juice, and crushed red pepper flakes and simmer about 2 minutes. Stir in the Parmesan and parsley ~ let simmer another 2 minutes or so. Taste and adjust salt & pepper, if necessary.
Now toss in the cooked pasta and shrimp ~ and toss until completely combined. Sprinkle with reserved chopped parsley and serve.
