HAM, BEAN and SWEET POTATO SOUP
2 sweet potatoes, peeled and cubed
1 (15 oz) can cannellini (white kidney) or Northern beans, rinsed and drained
1 to 1-1/2 cups cubed leftover cooked ham……………1 TB crushed garlic
1/2 cup chopped onion (1 medium)…………………….. 1 tsp Kosher salt
1/2 cup peeled, chopped carrots…………………………1 tsp dried thyme
1 TB fresh chopped parsley……………………………….1/2 tsp black pepper
2-3 cups chicken or vegetable broth (or 2-3 cups water with bouillon cube(depends how thick you want your soup)
1/2 cup milk
STOVETOP: In a Dutch oven, combine all ingredients. Bring to a boil; then lower temperature to simmer, cover and simmer for 2-3 hours. CROCKPOT: cook on LOW for 6-7 hours. ** Serves 4-6
When it’s done, if you want you can mash it down slightly with a potato masher to make it even thicker.
