SMOTHERED PORK CHOPS in MUSHROOM WINE GRAVY
about 1 to 1-1/2 lbs. boneless loin center-cut pork chops
1 tsp. Kosher salt..................................1/2 tsp. black pepper
about 3/4 cup flour...............................about 2 TB oil (I used extra-virgin olive oil in a non-stick pan)
Mushroom Wine Gravy:
1 tsp. Balsamic vinegar.........................about 10-12 sliced fresh mushrooms
1/2 cup white wine...............................1/2 cup catsup
OPTIONAL: fresh chopped parsley for garnish

Flour chops; season with salt and pepper; brown quickly on both sides in large skillet in oil. Turn the heat down to simmer and scatter the mushrooms around in the skillet. Combine all sauce ingredients. Pour over the chops & mushrooms ~ and simmer, covered, for 1 hour. Serves 2
TIP: Serve with the gravy over mashed potatoes
