I added the instruction photos from another listing, just so you could see ~ but these are really some of the easiest cookies to make and change to different variations.
SPRING BISCOTTI * Strawberry Lemonade and Orangeade
1/2 cup (1 stick) butter, softened …………….1 cup sugar
2 eggs ………………………………………….. 1 TB jello powder (strawberry, lemon or orange)
1 tsp lemon or orange extract (as needed per which cookie making)
1 tsp vanilla extract ………………………….. 2-1/3 cups all-purpose flour
1-1/2 tsp baking powder………………….…..1 TB cornstarch

Preheat oven to 350. Cover baking sheet with parchment paper (or spray).
Cream butter and sugar. Add eggs and extracts; mix well. Stir in flour, cornstarch and baking powder; beat on med-high until dough comes together (off the sides of the bowl).
With your rubber scraper, push the dough all together so that it's a mound in the bottom of the bowl. First, cut the dough in half and set one half aside (for the Orangeade). Then cut the remaining dough in half and put each half into a little bowl (one for lemon & one for strawberry.)
I did the strawberry first ~ putting it back into the mixer bowl and adding about 1 TB strawberry jello mix and about 1/4 tsp of neon pink food coloring ~ mix until it's all mixed together well. Remove from bowl & paddle & set aside. Wash the bowl & paddle and do the same with the lemon portion. Then take out both doughs and roll them out (with your hands) into long skinny logs about 12-14" long. Push them together and squash them down flat about 3" on the baking sheet. Make the log even (sometimes easiest if you lightly dampen your fingers) and also straighten top, bottom and sides.
Now you can do the Orangeade batch. Add the orange jello, extract and neon orange food color (remember you have twice as much batter as you did with the Strawberry Lemonade). Everything else is the same ~ take the dough out of the mixer bowl and roll into a log with your hands ~ then smash it down into about 3" wide ~ smooth it all out.
Bake about 20 minutes & remove. Lower oven to 325. Let the biscotti cool about 5-15 minutes. Slice into 1" to 1-1/2” slices (I use a long serrated bread knife), and flip onto their sides. Return to oven and bake another 9-10 minutes. Cool and dust with powdered sugar, or brush with glaze. Makes about 50 slices.
CLEAR GLAZE to brush on:
(You won't really taste the liquor, but this makes for a very shiny clear glaze)
2 TB vodka (or limoncello) for Strawberry Lemonade ~ 2 TB Triple Sec or Grand Marnier for Orangeade
2 TB clear corn syrup ...................................1 TB powdered sugar
Whisk all together until the powdered sugar is dissolved. Brush on the biscotti (turned onto the flat-side-down). I just did about 5-6 before putting sprinkles on, so it didn't harden up before I could get them on. It will stay sticky for a while though (how long depends on the humidity where you live)
